I'm getting this system to supplement our current church sound system, which was setup primarily for the spoken word. This is being added to support musical activities during service (Music - keyboard, vocals, etc. will be sent using a different mix). My primary question is can I simply set this up with the default settings on the AMP (Stereo , no DSP).
Additionally, should I tune the system using the built in EQ via System architect, use the digital sound board GEQ /PEQ, or use a separate hardware EQ processor?

Any tuning that needs to be done should be handled by the console (eq, gating, compression)... you didn't mention what console would be used. Start with the default setup on the amp, however, make sure no DSP is configured. Once you know the system is working, use the DSP on the amp to set limiters (voltage limits) for the speakers.
