Newbie - Color Coding Channels

I am an old-school sound guy, just purchased a UI24R for my church and am setting it up in my home to mimic the existing discrete mixer. I came across a Youtube video where the author used color coding under each channel to specify whether it was a VOICE channel, or INSTRUMENT channel, etc. I have my own ideas on how I would use this, but the author had turned his comments off and there is no way to ask him, and I cannot for the life of me figure out how he did it. Here is his video:

I find that the manual is pretty useless. In fact, I have never seen a software manual not at least LABEL each button, especially since the buttons do not have help tip pop-ups or alt text. I admit, I'm not the brightest bulb on the tree, but it took me quite a while to figure out, no help to manuals or tutorials, that the numbers 1 through 4 appearing on the top right of each channels LED meter was for the assigned MUTE groups.

Anyway, to educate an old dog, how do you color code each channel?

Thanks for any help.
